This one really hits the spot! It lifts the humble sweet potato and makes it taste quite exotic. Don’t be tempted to leave off the topping as it finishes off the soup beautifully and adds a wonderful crunchiness.

Ingredients

  • 2 tbsp olive oil
  • 2 small onions, chopped
  • 2 garlic cloves, chopped

Method

  1. Heat the oil in a large saucepan set over a medium-high heat. Add the onions, garlic and chilli and cook for 2 minutes, stirring regularly, until just starting to soften. Add the sweet potato along with the salt and pepper, then cover the pan and sweat the vegetables for 3 to 5 minutes.
