With practice anyone can make great poached eggs. The key is finding the freshest eggs available – the fresher the better.

Ingredients

  • 4 eggs

Method

  1. Bring a wide pan of salted water to the boil.
  2. Break the eggs individually into cups or shallow dishes and carefully slide them into the water one by one. Once they’re all in, reduce the heat to a gentle simmer and leave to cook.
