If you love sharing platters, this one is perfect for dinner parties or a family supper. It really could not be easier to prepare and looks great in the middle of the table outdoors. Chilli and garlic add a gentle kick to the sea trout. I just recommend that you keep the trout slightly pink to appreciate its lovely nuttiness.

Ingredients

  • 4 Norwegian sea trout fillets, about 140g/5oz each, skin on, halved
  • 2 garlic cloves, chopped
  • 1 red chilli, deseeded and roug

Method

  1. Marinate the trout fillets in the garlic, chilli and a splash of olive oil, then set aside, covered in the refrigerator, for 30 minutes to allow the flavours to develop.
  2. Heat a large frying pan (skillet) over a medium heat. Add the butter and 1 tablespoon of oil and, once the butter has melted, pan-fry the fillets for 2–3 minutes on each side, basting the fish in
