Truth be told, this recipe started at The Four Horsemen as a veal sweetbread dish. As much as I love sweetbreads, though, I can’t imagine many home cooks procuring them without running into a slew of frustrations along the way. Replacing the sweetbreads with chicken and pairing the crunchy, crispy thigh with a rich, luxurious, Italian-American-joint-inspired Marsala sauce might be even more delicious.
