This was one of the first dishes we put on The Four Horsemen menu. I always liked the casual grazing from bar to bar you can do in Spain—dropping into one local place after another where you can have a glass of wine or a gin and tonic and some snacks. Particularly in Madrid, you find sort of shockingly good patatas bravas, crispy cubes of fried potato with a spicy sauce.
With care and real attention to detail, you can turn out crisp and perfectly seasoned potatoes with sharp tomato
