MRS. KSENOU, a passionate cook and the former owner of a small family hotel in the village of Vrontados on Chios, gave me the recipe for this light fruit dessert flavored with dried fruits and almonds. Chios is famous for its almonds, which are used to produce soumada, a kind of thick almond syrup. It’s mixed with sweet wine and orange liqueur to make the syrup for these apples. I’ve found an easy way to prepare it at home.
