The membrillo, or quince, Aphrodite’s love apple, has been used since ancient times to make delicious preserves. Spanish markets are piled with these luscious golden fruits with their curious patches of fluffy down. Snap them up when you see them and leave them in a bowl to scent your home before you finally transform them into this glorious sweet paste.
