Fubá is a very fine milled maize flour, a delicate cousin of polenta. It is widely used throughout Brazil, especially in the state of Minas Gerais, to make a number of different breads and cakes, but this is perhaps the simplest of all. A small amount of hard cheese gives the cake a fantastic savoury and salty depth.
