The papaya (pawpaw) is a delicious exotic fruit that grows wild in the lush forests of Brazil. Its juices contain an enzyme that breaks down meat fibres, so the fruit is often used as a tenderizer or eaten as an aid to digestion. It is sometimes served when still green and unripe as a vegetable, but here the ripe, sweet orange flesh is turned into one of Brazil’s most popular desserts.
