Any pudding or cake with this many eggs in the recipe is likely to be of Portuguese origin, but the addition of coconut gives these little cakes a Caribbean flavour. They have an African name too, from the dialect spoken by the slaves brought to Brazil; quindim (pronounced ‘keen-jean’) means ‘girlish charms’ - a fitting name for these delicate little puddings.
