Hearts of palm (palmito) are available fresh as well as conserved in jars or canned. Fresh ones are an expensive delicacy, but most Brazilians are happy to pay a little extra for meals containing palmito, which has found its way into hundreds of recipes.
1 Trim the ends of the palm heart stalks with a sharp knife to ensure they have flat ends, then cut each in half diagonally into two equal-sized wedge shapes.
2 Cut a slice from the base of the tomato and discard. Chop the tomato into quarters.
