Tutu is a traditional dish from the rural state of Minas Gérais, still cooked by local cowboys when out on a cattle drive. The dish is made with light brown beans, similar to kidney beans, but outside Minas most people use the stronger-flavoured black bean, add extra flavourings and purée the mixture rather than mash it.
1 Put the cooked black beans and water in a blender and blend for 2-3 minutes or until the mixture is a smooth purée. Pour and scrape into a medium pan.
2 Bring the bean purée to the boil, then lower the heat and gradually add the cassava flour, sprinkling only a fine dusting of it over the beans at a time.
