A batida cocktail is a mix of cachaça and fruit juice. The secret of success is to introduce air in to the mix by either vigorous shaking or blending.

Ingredients

  • 400 ml/14 fl oz/1⅔ cups passion fruit concentrate

Method

1 Put the passion fruit concentrate, cachaça, water and sugar in a blender and blend at high speed for a minute, until well mixed and slightly frothy. If using the fresh passion fruit, cut in half and scoop the pulp into the mix, blend for another minute, then strain the liquid through a sieve (strainer) into a jug (pitcher).
