In a culture in which rice is eaten every day it would be impossible not to have some desserts made with it, and Peru has several favourites. Milk pudding made with rice is a popular dish in many other countries, but the spices, fruits and dark brown sugar in this Peruvian version make it different and delicious.

Ingredients

  • 250 g/9 oz/ cups rice
  • 1 litre

Method

  1. Wash the rice. Put the water in a large heavy pan with the cinnamon sticks, cloves and sugar and bring to the boil.

  2. Add the rice and the coconut. Cook over a medium-high heat, stirring often, for 20-25 minutes or until the rice is cooked.
