This dish was inspired by a visit to Singapore where my parents tried a simple bean sprout dish with toasted Asian salted fish, rather like the well-known Mediterranean bacalhau or salted cod. (Incidentally, salted fish was introduced to Asia by the colonial Portuguese traders.) In the late 1970s Moreton Bay bugs hadjust hit the commercial seafood market and they were very much in demand.
