For speed and ease, packs of ready rolled pastry are a lifesaver. Here, I have spread the pastry with some fruity jam and frangipane (a classic sweet almond mixture), and topped it with fruit before baking. This is where you can be very flexible as the fruit can be whatever you like depending on the season, preference or availability. Cut into fingers and drizzled with a tangy icing, these make a nice treat – although you can also cut them into larger portions and serve as a dessert.
