Sometimes you just need comfort food in its purest form. This isn’t really a pie, but more of a bake and reminds me of a fantastic one I used to love as a child. I like to make it with Cheddar, but you can use almost any cheese you like – grated or crumbled. Stilton or gruyère are also favourites of mine, but only when I’m in the mood for a stronger flavour.
