This is great for summer entertaining. You can choose whatever you like to put in the tandoori marinade, making it suitable for pescatarians, vegetarians, meat eaters or vegans (providing you use a plant-based yoghurt). Prepare well ahead of time and leave in the fridge in order for the spices to work their magic.
For the colourful aromatic salad, I like to use brown basmati rice for the nuttiness it gives, not to mention the added goodness.
