It boggles my mind that 40% of Americans have never tried lamb. You guys are missing out! Just look at the crust on those chops. That comes from a really hot cast iron pan and the flavor is righteous. Drizzle with green sauce and you are now a lamb believer.
Prepare the lamb chops. If you buy the lamb at a store that has a butcher, ask them politely to cut the rack into individual chops. This will save you time.
