Ingredients: 1 medium shallot, diced; 1 tsp (5 mL) pepper; 12 fresh oysters; Fresh lemon wedge, for serving; 1 tsp (5 mL) wasabi paste; 3 Tbsp (45 mL) lemon juice; ¼ tsp (1 mL) salt; ¼ tsp (1 mL) sugar; 3 Tbsp (45 mL) chives; ¼ cup (60 mL) rosé; 2 Tbsp (30 mL) red wine vinegar; 1 Tbsp (15 mL) diced shallots; ½ tsp (2.5 mL) maple syrup; 1 Tbsp (15 mL) grapeseed oil; 2 Tbsp (30 mL) prepared horseradish; 2 Tbsp (30 mL) chopped chives; ½ cup (125 mL) ketchup; 1 Tbsp (15 mL) lemon juice; ½ tsp (2.5 mL) seafood seasoning; ½ tsp (2.5 mL) smoked paprika

Fresh shucked oysters are such a celebration. They are the jewels of the ocean! Oysters will dance on their own, but in this recipe I had some fun with the condiments.

I plate the oysters on broken ice. If the oysters come in a box, use the box as a vessel. It looks so fun and adds to the celebration.
