This is a perfect match for moscatel sherry, with a fantastic synergy between the pungent cheese and the sweet quince. Quince paste and quince syrup are both obtainable from specialist food stores, making light work of this dish.

Method

To make the Manchego wafers, Preheat the oven to 170°C. Line a flat baking tray with baking paper and brush the surface with butter. Lay a sheet of filo on the paper and brush the top surface with butter. Sprinkle with a thin, even layer of grated cheese, lay the second sheet of filo o
