Sabu was the cook on our rice barge when we cruised the backwaters of Kerala, in an area known as Kuttanad. I made a special request for duck one day and he cooked it in his home style, typically Malayalam, with lingering spicy flavours. It’s a taste memory that has stayed with me ever since. This is his version of Keralan Kuttanad duck. Thank you, Sabu!
