Ingredients

  • 2 tablespoons sea salt
  • 2 kg piece pork belly
  • 3 green

Method

Rub the salt into the pork and refrigerate on a tray, covered, for 3 hours. Bring a stockpot of water to the boil and blanch the pork belly for 2 minutes. Remove the meat from the pot and refresh immediately under cold running water. Repeat this process twice, blanching the pork three times altogether. Put the pork in a large bowl, skin-side down.
