  • 100 g/ oz/7 tbsp butter, softened, plus extra for greasing

Method

  1. In a bowl, beat the butter and sugar together until pale and light using an electric hand mixer, then beat in the egg yolks. In a clean bowl, mix the flour and ginger together, then gently stir into the butter mixture to form a dough. Wrap in cling film (plastic wrap), flatten and refrigerate for 45 minutes, or until the dough is firm but not hard.
