I could munch on this cucumber condiment morning, noon and night. Thai people love to serve a side of cukes to add a crunch and spicy, yet cooling, accompaniment to everything from a savory curry to satay. It’s also excellent with fried rice and spring rolls.

Ingredients

  • 2 cucumbers, peeled, seeded, and diced
  • 2 small shallots, thinly sliced
  • 2 tablespoons finely chopped

Method

  1. In a small bowl whisk together the ingredients for the Dressing.
  2. Combine the cucumber, shallots, fresh coriander leaves, and chili in a medium bowl and toss to combine with the dressing. Garnish with the peanuts.
