Mediterranean Chicken Kebabs with Pita and Tzatziki

Ahhh, I could eat this whole recipe all by myself. Every summer in Southampton, the Greek Orthodox church has a big Greek festival. They have dancers in traditional costumes, children sing, there are games, and there is a ton of food. The braised lamb shanks are exceptional, and even though it’s summertime, when it seems like braised lamb shank would be too heavy, I find a way. They also serve chicken souvlaki that is totally craveable, so I came up with this recipe to satisfy my hun
