Okra, a core ingredient in the kitchens of Upper Egypt, is prepared in every home in Luxor in a tomato-based tagine. In Egypt, cooks prize the tiniest, most tender pods - known as “okra zero” - for their delicate texture and refined flavour. Traditionally, the dish is cooked in rustic clay pots from Luxor, but a cast iron pot works just as well too.
