  • 3 large tablespoons China Tea
  • 30 cl (½ pint) water

Method

  1. Dissolve the sugar substitute in the water and bring to the boil in the saucepan. Add the tea and leave in the covered pan to infuse for three hours.
  2. Strain four tablespoons of the infusion and pour it into a flat dish; slip it into the freezer and stir it occasionally with a fork as it sets to break up the mixture into crystals.
