In medieval England, flummery was made by boiling oatmeal, which was then strained to give a thickened jelly-like substance. Later, flummery became a richer dish of cream flavoured with spices and almonds or wine. Today, flummery is usually based on milk or berry fruits and thickened with gelatine or cornflour.
