Method

Beignets de Bananes. The bananas are peeled, cut in four pieces, soaked for ½ hour or longer in rum, and freely sprinkled with sugar. Dip each quarter of a banana in a good frying batter and fry in hot oil or fat to a light brown, drain and sprinkle with vanilla sugar.
