I really love the contrast between the hot and spicy flavours of the chilli jam, and the coolness of the herb mascarpone in this recipe. Together with the burgers, they add up to a dish that is packed with flavour and intrigue. For maximum taste, cook the burgers on a charcoal barbecue.
