This is a take on toasted cheese and is a speciality of the Bouchoux plateau area at the southern end of the Franche-Comté region of France. Serve warm, cut into wedges with a glass of Jura wine made with Chardonnay, or a German Spätlese using the same grape style. This is a lovely snack or aperitif, and certainly one of the oldest recipes I have come across.
