Ice Cream Sandwich

Ice cream sandwiches are a quintessential American thing; the ones you find in the UK just don’t compare. When we lived in NYC we would have these after dinner or when we were watching a movie and I miss them dearly: every time we go back to the States we make up for it. This is as close as I can make them to the American ones: the cookie is blended up to make a softer outer layer, and the ice cream should stay nice and soft and chewy.
