Spiced Oranges

• 18 small oranges
• 1.25 kg/2½ lb granulated sugar

Cut the oranges into 7 mm/¼ inch thick slices, discarding the ends and removing pips. Place in a wide, flameproof casserole and cover with cold water. Bring to the boil and simmer gently for about 40 minut
