This is my version of Caribbean ‘coco breads’. These don’t contain coconut so the name is a mystery – perhaps they got it because you split each open, like a coconut, then stuff a filling inside. When I first made them, they were more loco than coco, but very good all the same. They’ve got two pockets you can fill with anything you want. I like to put grated cheese and salad on one side and Chicken Kickbabs or fried veggies on the other. But you could use
