A dubbed-up version of a British classic, this is great with some fried chicken, or used as the sunny-orange topping for my Caribbean Fish Pie.

Method

  1. Cut the potatoes into medium, equal-sized chunks. Put in cold water, bring to the boil and simmer until tender (it’s faster than ordinary potatoes; only about 8–10 minutes).
  2. Mash with the butter and season with nutmeg, allspice and salt and pepper, to taste.
