To prepare the pastry, put all the ingredients (apart from the water) in the bowl of a food processor, or a large mixing bowl using your fingertips to combine, and mix to obtain a fine crumbly texture. Add sufficient of the chilled water to bind the mixture, shape into a ball, and chill in the refrigerator for about 1 hour.
Roll out the pastry and use it to line the base and sides of a
