We serve this refreshing sorbet in our Agua de Chilacayota, but it’s great by itself, too.

Ingredients

  • 2 cups water
  • cups sugar
  • 7 tablespoons

Method

  1. In a medium-size saucepan, combine the water, sugar, and 3 tablespoons of the lime juice and bring to a boil. Reduce the heat and simmer until the sugar dissolves, about 5 minutes. Remove the pan from the heat, put it in an ice bath, and cool completely. Stir in the remaining lime juice, pineapple juice, and lime zest and cool.
  2. Pour the mixture into the freezer
