This may be the easiest recipe in the book but it’s one of my favourites – it’s fantastic for brunch but just as nice with some salad for lunch, or as a starter. If you cook the eggs a little longer, they hold their shape and become conveniently portable – great for a packed lunch or picnic.

Ingredients

  • butter for greasing
  • 8 slices Parma ham
  • 4 eggs
  • salt and freshly gro

Method

Preheat the oven to 200°C (180°C fan).

Butter four ramekins and line them with two slices of Parma ham each, creating a little bowl. Crack an egg into each one and season with salt and pepper.
