To prepare your citrus fruits ready for preserving you’ll need to scrub them clean to remove any wax. This also softens up the tough peel to allow the sugar syrup to be absorbed and to candy the fruit.
Pierce the skin of the citrus using a small sharp knife. If you’re using kumquats, you’ll only need to pierce each one once, but for a grapefruit pierce four times. Fill a large deep pot
