It is very common in Brazilian restaurants to serve couvert (which usually consists of a basket of bread, assorted spreads and amuse-bouches) as soon as guests are seated at their table. One of my favourite foods of all the different types of couverts is quail eggs with red sauce. It’s easy to make and very refreshing. The sauce can be prepared up to 3 days ahead of time.
