Season shrimp with salt, pepper, ginger, lemon juice, lemon and lime zests and set aside. In a skillet, sauté garlic in butter. Add onion, salt, pepper and sauté some more. Add this mixture to seasoned shrimp and mix it in a food processor. Transfer shrimp mixture to a bowl and add flour and egg whites. Sprinkle parsley, basil and mint, thinly chopped.
