By rights Margret Green’s sponges should be a disaster. She breaks most of the ‘golden’ rules usually applied to creating these feather-light, golden mountains but it doesn’t seem to matter. The Sponge Queen from Bow Hill wins first prize almost every time. The recipe she uses was given to Margret at her kitchen tea when she married in 1966. Guests wrote recipes into an exercise book, giving the bride a wonderful collection of proven favourites to start married life.
