In the central Auvergne region of France, where Cantal cheese is produced, Aligot potatoes are a staple. Cantal is a young, hard cheese with a simple flavour but, when married with the potatoes and beaten like billy-o, it delivers this heavenly, wicked dish. The French often serve the potatoes with scissors to cut the super-elastic potato mix — otherwise it’s a long stretch!
