A dessert for those hot summer days when you fancy something soft and fragrant, but not too sweet. Rose syrup can be found in Middle Eastern shops, but you can use rose water if this is not available.

Ingredients

  • 125 ml (4 fl oz) hot water
  • 2 sachets gelatine (about 11

Method

Pour the hot water into a small bowl, add the gelatine and stir briskly until dissolved. If the gelatine does not thoroughly dissolve because the water has cooled, stand the bowl in a pan of warm water over a low heat to help it along.

Divide the raspberries between 6 pretty glasses. In a pan, warm the rose syrup or rosewater with the water, then remove from the heat, add the dissolved
