Recall that the 1-Build Levain from the previous project was divided into two portions. One portion was used to make the One-Build Sourdough Bread and the other portion was set aside.
Use this reserved portion to make the 2-Build Levain for this project. The procedure is the same as for the Basic Levain. Namely, thin the 1-Build Levain with Water and then thicken it with Flour. Ferment it on the floor and then transfer it to the refrigerator overnight.
