Feijoada Croquettes

If you’ve got leftover Feijoada na Instant Pot, you gotta make these croquettes! They are absolutely delicious and go great with a caipirinha or an ice-cold beer. Here we use bacon and collard greens to stuff the bolinhos, but you can stuff them with whatever you like, including leftover meat from the feijoada. Serve with a nice dipping sauce or with some good quality hot sauce for those who like a bit of heat.
