This is a type of farofa dish cooked with collard greens. If you’re not familiar with farofa, it is a popular Brazilian side that consists of toasted manioc/cassava flour (farinha de mandioca) that is cooked with aromatics and various ingredients. It is a very versatile side dish, pairing great with anything from rice and beans to a nice roasted pork. I have kept this recipe vegan, but you can also add bacon and/or eggs if you desire.
