There are as many picadinho recipes as there as cooks in Brazil. Every family has a recipe! In my version, succulent and tender beef tips are served in a savory beer gravy that is thickened with a technique I borrowed from French cuisine: the beurre manié. Equal parts butter and flour are used to make a paste, which is then stirred into the sauce to create a rich, irresistible gravy.
