If you’ve been to a hamburgueria (burger shop) in Brazil, chances are you’ve seen picanha burgers on the menu. Brazilians love picanha, so it’s no surprise that we also use it to make burgers! This burger is almost always served with a special green mayo, made of milk and herbs, so I’m including a recipe for that too. The secret here is to use very cold milk to make the mayo. The colder the milk, the less oil you will need to emulsify it.
